ผักกวางตุ้ง
ผักกวางตุ้งชื่อเรียกเต็ม ๆ ว่า ผักกาดเขียวกวางตุ้ง เนื่องจากมีการปลูกกันมากที่มณฑลกวางตุ้งของประเทศจีน ภายหลังจากมีการนำเข้ามาปลูกในประเทศไทย เป็นที่นิยมของคนทั่วไป เนื่องจากมีรสหวาน กรอบ เมื่อผักหรือลวกแล้วจะนิ่มน่ารับประทาน จุดเด่นของผักกวางตุ้ง คือ เป็นผักที่มีเยื่อใยมาก มีไขมันต่ำ ประกอบหารหารได้หลายประเภท
ผักกวางตุ้งชอบดินที่มีอินทรียวัตถุปนอยู่มาก ๆ สามารถปลูกได้ทุกฤดูกาล แต่จะงอกงามได้ดีในช่วงที่มีอากาศหนาว การเตรียมแปลงปลูก ขุดดินใส่ปุ๋ยอินทรีย์ผสมคลุกเคล้าให้เข้ากันดีแล้ว เกลี่ยดินให้เรียบ แล้วปลูกโดยการหวานเมล็ดลงในแปลงโดยตรง หว่านเมล็ดให้ทั่วแปลงระยะห่าง ๆ แล้วกลบแปลงด้วยปุ๋ยคอกเก่าบาง ๆ คลุมด้วยใบไม้แห้ง หญ้าแห้ง หรือฟางข้าว รดน้ำให้ชุ่ม 3-5 วันเมล็ดก็จะงอกเป็นต้นอ่อน ให้เราหว่านปุ๋ยคอกเก่ากลบโคนต้นอีกครั้งหนึ่ง ต่อจากนี้ไปเป็นการดูแลรักษาให้รดน้ำเช้าเย็น หมั่นใส่ปุ๋ยคอกเก่าบ่อย ๆ ดูความเจริญเติบโต ถ้าส่วนใดเจริญเติบโตไม่สม่ำเสมอก็ให้เพิ่มปุ๋ยคอกลงไปอีก สามารถเก็บมาปรุงอาหารได้ตั้งแต่ผักอายุ 20 วัน โดยการถอนส่วนที่ขึ้นแน่นจนเกินไปออกไปก่อน และสามารถทยอยเก็บไปปรุงอาหารได้ ส่วนที่เหลือก็จะโตขึ้นเรื่อย ๆ จนกว่าจะออกดอก
